Wine
By Farr Viognier is a blend of plantings from two estate vineyards. The first is the original 1994 planting in red soil over limestone. The second is a younger planting in red ironstone.
The fruit is picked early to retain its natural acidity. At the winery it is foot stomped and left on skins for several hours. After pressing, the juice is put straight to French oak barrels for natural fermentation.
The barrels are stirred gently, encouraging malolactic fermentation. The wine is then racked, fined and filtered. It is ready for bottling 12 months after harvest.
Pale gold, By Farr Viognier is luscious yet restrained, with stone fruit flavours, underlying acidity and a lingering aftertaste. Cellaring potential is five years.
